Casein is thick due to the structure of the single
protein. Unlike whey, casein is denatured when
subjected to acid digestion in the stomach and results
in curd formation. This slows the release of breakdown
components of casein (e.g., oligopeptides, di and
tripeptides, or amino acids) from the stomach into the
small intestine. Therefore, absorption in the small
intestine and entrance of these amino acids into the
blood stream occurs over a longer period of time. This
steady influx of amino acids helps to maintain your
body/musculature in an anabolic state.
