Hi Jamie just wanted to let you know i learned how to make biscotti in culinary school and i wanted to tell you you can add cranberries (soaked in water or liquor) to your recipes :) so its not so dry :)
Jamie says in this video that she sometimes adds protein powder, but does anyone know how to do it without have to many dry ingredients? Do I need to take out some flour or add more liquid somehow?
Hey BellaSella! So sorry for such a late reply. If you want them to crisp up, once the timer goes off, turn off the oven and let them cool slowly for an additional 5 to 10 min. Be careful not to burn them and the longer they stay in the harder they will get. As for your sweetner, that sounds great! I've quit using any splenda. I've been doing a combo of Xylitol and Stevia in all my baking.
I made these and used 1 tsp NuStevia Nocarbs blend powder and it came out tasting perfect, however the texture is kind of a tough chewy. Not 'biscotti' like. Did I do something wrong?
